Characteristics

Fennel is one of the most widely used aromatic plants in the world. This also allows for a long list of varieties, where climate and geography play a crucial role. These Fennel Seeds come from the island of Evia, where there's a long tradition of cultivation for the use in Greek spirits. This sweet and beautifully balanced variety is cultivated by a third-generation farmer, picking the most aromatic parts of his harvest specifically for Daphnis and Chloe.

Bursting with flavour, this licorice-sweet fennel surprises with intensity without being bitter. The balance within, makes it very easy to combine and equally successful in sweet or savory dishes. As a tea, high-quality fennel contains many valuable compounds such as calcium, flavonoids, minerals, amino acids, and fatty acids. Great as a digestive and to treat stomach muscle spasms.

How to use

Give the following combinations a try: chili/fennel, pepper/fennel, and almond/fennel - place in a mortar and pestle and flow in the kitchen! The first two will take pork and oily fish to another level; the third one is great for cookies.

From a small workshop under the Acropolis Hill of Athens, focused on bringing agricultural qualities from all over Greece to the hands of many. Evangelia and her team at Dapnhis & Chloe scour through every nook and corner of Greece's mainland and islands. They partner with really small organic farmers and cultivators, who produce the most incredible indigenous herbs. Their efforts have resulted in farmers believing in the forgotten, heirloom varieties and couldn't be happier to see these efforts cross borders outside of Greece.
